Black Beans, drained and washed |

Red Bell Pepper, diced |

Red Onion, diced |
| 1 Bunch |
Cilantro, chopped |
| 1 quart |
Balsalmic Vingerarette Dressing |
| 2 lbs |
Cut Corn Roasted in Oven |
| To taste |
Salt, Pepper, Cumin |

| Preparation:
Drain cut corn and spread onto unlined sheet pan. Bake on 350o for 15 minutes.
Combine all ingredients in small lexan tub, stir well. Store in cooler. Can be made days in advance.
Makes approximately 2 ½ gallons. |
