Black Bean & Roasted Corn Salsa
Recipe for Black Bean & Roasted Corn Salsa

 

2-# 10 cans Black Beans, drained and washed
1 Red Bell Pepper, diced
1 Red Onion, diced
1 Bunch Cilantro, chopped
1 quart Balsalmic Vingerarette Dressing
2 lbs Cut Corn Roasted in Oven
To taste Salt, Pepper, Cumin
Black Bean and Roasted Corn Salsa served with Totilla Chips
Preparation:

Drain cut corn and spread onto unlined sheet pan.  Bake on 350o for 15 minutes.

Combine all ingredients in small lexan tub, stir well.  Store in cooler.  Can be made days in advance.

Makes approximately 2 ½ gallons.
